edit: I see v1.9.3 of the GUI now supports apple silicon so maybe the CLI will in the near future?

A workaround is to install the Mac App (https://imageoptim.com/mac) and instal CLI with node.

FYI, brew install now supports ARM after Homebrew/homebrew-core#216640
