[meta] Patch 7.5 Update Tracking

This issue serves as general checklist of necessary updates and (anticipated) content we intend to support following the release of Patch 7.5. The checklist will be updated as needed with additional work items/content changes after patch notes are released or as additional work items are identified.

I don't see any tracking issue indicating timelines/triggers for the second walk (there's no 7.3 tracking issue?). I do have some basic timelines I am working on for those fights, and might take a crack at the 7.5 alliance raids after that.

I'm looking at new extreme, but I've been having really bad connection problems since the patch for some reason so I'm not going to commit to it until I get some good/valid data.

Edit: I managed to get my connection to be stable enough to get good footage and logs, so I'll start working on extreme. Will need to find an enrage log, and pulling from FFLogs is generating bad data at the moment (e.g. Meteorain is coming back as Enhanced Venomous Bite), so I'll be on the lookout for an actual network log file for it.

@jacob-keller I believe Harbinger in the ACT Plugin Discord server was working on that, but I don't remember how far they got. Their last message was in January. Probably worth a ping there to see.

I had started on the timelines for Windurst, but if you plan to do that I'll leave it to you and move on to Shinryu instead.

Go ahead and start them. I'll try to follow up with Harbinger and see if he has any better progress than I do. I'll focus on the second walk for now.
