Using yjs subdocuments?

Hi folks, did you think about using https://docs.yjs.dev/api/subdocuments for cell outputs? Or maybe for cells?

Just for my own understanding, could you clarify the specific motivation for using subdocuments for cells? Are you thinking this is an alternative to the output service proposed in this repo?
