Logbox selectable error text

Summary

Makes error text in LogBox selectable and adds a "Copy" button to
easily copy the full error to clipboard.

Changes:

• Added selectable={true} to Text components that display error
  messages, stack frames, and code frames in LogBox
• Added a "Copy" button in the error message header that copies the
  full error (title, message, and stack trace) as plain text

Test Plan

1. Trigger an error in a React Native app to open LogBox
2. Verify you can long-press and select text in:
   - The error message
   - The stack frame method names and file locations
   - The code frame source preview
3. Tap the "Copy" button next to the error title
4. Paste in a text editor and verify it contains:
   - The error title (e.g., "Console Error")
   - The error message
   - The full stack trace formatted as:

at methodName (file.js:10:5)
at anotherMethod (other.js:20:3)

Hey! Just checking in on this one — it's been sitting for a couple months now. It's a pretty simple change: just makes the error text in LogBox selectable so you can copy-paste it. The failing CI check is unrelated to my changes (missing metro-babel-register in their script). Would love to get this merged if someone has a sec to review!
