Support for OpenAPI 3.1.0 in Serverless Workflow #560

What would you like to be added?
Currently, Serverless Workflow integrations appear to work with OpenAPI 3.0.1, but do not properly support OpenAPI 3.1.0 definitions.
Since OpenAPI 3.1.0 is the latest stable version of the specification and introduces important improvements supporting it would improve interoperability with modern API tooling and specifications.
