Add instructions for how to generate workflow history JSON files

In references/*/testing.md, the Replay Testing sections show how to load a JSON file and use the replayer to replay the history from the JSON. And encourages this testing pattern.

But, across all/most languages we don't show how to make that JSON file. Needs. to be fixed.
