Update docs for new resource discovery ui

I'm not sure we should merge this until:

• The UI has settled a bit more (there's some open UI feedback I plan to incorporate soon)
• We are ready to completely deprecate/remove/redirect users away from the old hardware catalog since these docs remove that stuff and replace them with these new docs (alternatively, we could put this new stuff in its own section so we have both in parallel, but that feels a bit much)

Creating as a draft for now to solicit feedback.
