This PR makes the following changes to sample workflows:

  • add concurrency group names to the defang job to prevent concurrent deployments to the same stack
  • add manual dispatch triggers to allow manual downs to specific stacks
  • use config-vars-init-random to initialize some config vars with random secrets
  • use prettier to format all compose files and workflow files
