Add feature-complete install support with SeaweedFS, PGBouncer, and Podman

The installer now sets up the newer default stack, including SeaweedFS for storage, PGBouncer for database access, and support for running with Podman.
Profiles, nodestore, and other data are migrated into SeaweedFS-backed buckets, with existing files copied over when needed.
Optional features now include local JS SDK assets, custom CA certificates, StatsD metrics, and more complete feature support in the default setup.
Startup, upgrade, and restore scripts now handle the new services and defaults, while the setup and test flow was expanded to cover the new stack and migrations.
