0.11.1 rather than 0.11.0: 0.11.0 shipped with the data-loss path in #23, where an unreadable active manifest made garbage collection delete every image only the running runtime referenced. Pinned to the v0.11.1 tag commit on main; the release branch this PR previously tracked was rebased and deleted.

Bump avocadoctl to 0.11.0 (avocado-linux/avocadoctl#21), pulling in #17–#20 and the dm-verity root-hash support from #22.
