Remove legacy launch manager config

Up until the new launch manager configuration format was hidden behind a feature flag (Off by default).

This PR removes the feature flag and activates usage of the new configuration.
Furthermore, unit tests & integration tests have been updated for the new configuration format (see scripts/config_mapping/unit_tests.py and scripts/config_mapping/integration_tests.py).

The legacy configuration format is completely removed.
