sampler: capture from AUDIO_IN bus#912

Conversation
Use bus=2 (AMY_BUS_AUDIO_IN) for start_sample so recording reads the audio input rather than the synth output. Defer the synth=1 PCM patch setup until note-off, and pause grab_midi_notes during recording so the sampled key doesn't trigger playback before capture finishes.
